Only in very few cases do we source for ingredients further afield, such as with juniper, a key ingredient in gin that isn’t readily found nearby. On that note, We have a zero-tolerance policy for artificial flavourings and colourings. Everything used in the production process is 100% natural.

The aging process for spirits in Singapore’s tropical climate differs significantly from that in regions with temperate climates like Scotland, certain parts of America, and Japan. Due to the high heat and humidity in Singapore, aging happens at a much more accelerated pace. This phenomenon is commonly referred to as “tropical aging,” and similar outcomes are observed in other equatorial regions such as the Caribbean.
Several factors contribute to this accelerated aging process in Singapore. One key element is the climate itself. The high temperature and humidity levels promote a faster exchange of flavors and compounds between the spirit and the wooden barrel, thereby enhancing the maturation process.
Additionally, barrel size plays a role. Unlike in Scotland where 200-litre barrels are often used, we typically employ much smaller barrels. This smaller size increases the surface area relative to the volume, thus speeding up the interaction between the liquid and the barrel’s interior
Furthermore, the proof at which the barrels are filled is higher in Singapore, typically around 68% ABV (Alcohol by Volume), compared to the more common 55-65% ABV in other regions. Higher alcohol concentrations enable more aggressive extraction of organic compounds from the wood, thereby contributing additional flavors and complexity to the spirit more rapidly.
In summary, the unique combination of Singapore’s tropical climate, smaller barrel size, and higher proof contributes to a faster and distinct aging process, resulting in spirits with a unique character that can’t be replicated in other climates.
The minimum ageing period is derived from the fact that smaller barrel sizes age more rapidly than bigger barrels. A smaller volume means a greater ratio of the liquid inside comes into contact with the interior walls of the barrel, thus expediting the extraction of flavours from the wood. What You Can Expect During the Orientation:
Embark on a sensory journey with a curated selection of four distinct aged spirits. Our experts will guide you through the nuanced flavors, aromas, and complexities of each.
Learn the art of blending as you create your own unique blend of aged spirits. This interactive session offers personalized instruction and insights into the craft of spirit blending.
$58 per person, inclusive of GST. While this fee is non-refundable, it can be applied as a partial credit should you decide to proceed with our Chartered Programme. Please note that a minimum of 2 participants is required for each session.
